Glycation

Glycation is a reaction in which sugar molecules bond to proteins such as collagen, forming advanced glycation end-products (AGEs) that make tissue stiffer.

What it means

In skin, AGEs build up with age and with high blood sugar, and they are linked to loss of elasticity. Most dietary AGEs form during dry, high-heat cooking.

Skincare claims to “block glycation” are early-stage. Our AGE food rankings measure these compounds in 490 foods for anyone who wants to look at the diet side.
